THE GIST 

In the 40s my great grandparents, Tora and Johan Bonnier, started a patisserie from the ground floor of their house. On a little island called Saltö, in South East Sweden. 

Strandbadens Conditori quickly became the after school fika stop for kids on their way home. A regular hang out when they installed the town’s first pinball machine and jukebox. And even a ‘meet cute’ love story after three of the staff met their future spouses while working there.

For over 15 years, Tora baked the goods while Johan looked after the rest. Loved by the locals, cherished by the family. My grandfather Roland (pictured), still lives in the house today! With all this rich history, it’s no surprise that we started to dream something up from our own home in Seaford, Victoria.

After studying at an artisan food school in the north of Sweden, bakery work across Scandinavia, followed by a stint at Brunswick treasure, Ovens Street Bakery – we officially launched in April 2024.

While it might look a little different to the 40s, being online and all. We hope to still deliver the same local love and delicious fresh goods for years to come.
